Sweet potato casserole has really never been my thing. Every recipe I see just calls for sugar, sugar and sugar. There are two main styles I see, one topped with a sweet streusel-ly pecan topping and the more egregious version, the one topped with…marshmallows. I mean…I can’t believe someone tasted how sweet a sweet potato is and thought, “what this really needs is marshmallows”. But that is just me…and I don’t judge anyone for liking it, I just needed to find another way…and this is what I got…my “Not Sweet Potato Casserole” recipe
