Growing up, there was always this mysteriously delicious carrot and parsley salad that showed up on the Christmas dinner table. I was a picky eater, but I knew when I saw that carrot salad I wouldn’t be able to stop eating it. It’s sweet and bright and refreshing and the perfect balance to a rich meat you might find on Christmas. After asking for the recipe from my mom, she made me aware it was actually an old @alicelouisewaters recipe from @chezpanisse. That explains why it is so delicious.
