These days it’s very likely that there is at least one person at your holiday gathering that doesn’t eat meat. And usually, we just let them eat the sides and forgot the turkey. But that’s not very hospitable in my opinion. As hosts, we want everyone to be considered so today we are creating a vegetarian main course for thanksgiving that in my opinion kind of looks like a turkey, but it’s actually ahead of cauliflower. It’s a centerpiece that says to your meatless guests, “I’m thinking of you” and that's what the holidays are all about.
