This was fantastic!!! Really easy to make too. I couldn't find guanciale so i used pancetta instead and it was great. I think next time i'll add some cherry peppers

Very good. Made it 3 times in a fortnight.

I find you don't have to follow the recipe explicitly and be a bit fast and loose with the cheese amount. I always used middle bacon instead of guanciale in Australia because it's so much cheaper. 1/8th the price a kilo.

Also used Grana Padano instead of Pecorino just purely sourcing it and price.
