Pesto Alla Trapanese with Fresh Busiate

Today we make Pesto, but not the pesto you know, not the green Genovese pesto, the Sicilian tomato pesto, Pesto alla trapanese. The pesto that might be better than is green brother. Traditionally it’s also served with a southern pasta called Busiate, which we will also be learning today so let’s jump right into it.

Fantastic recipe. The pest is so simple but still elevates the best summer has to offer, fresh ripe tomatoes, to a new level. Making the pasta was really fun. I found it much easier to form than the other hand shaped pasta varieties on this site. I highly recommend giving it a try.


BTW, my dough rested for only an hour and it was perfect to work with.
