Rigatoni and meatballs are a timeless comfort food that never fails to please. The ridged rigatoni captures every drop of rich tomato sauce, while the tender, flavorful meatballs add a hearty touch to the dish. Has anyone tried freezing these? I’d love to make them for a pre Thanksgiving day meal- but do the work well in advance so I can enjoy company. Thanks!

I've freezed them with success. If you have a vacuum sealer that'll ensure they stay as fresh as possible. Usually to reheat I thaw in advance and just microwave in the bag.

I love this recipe! I bake my meatballs on a sheet pan and they turn out so well. Thank you Steve! Because of you there are no dull, bland meatballs in this house

How long/ what temp do you bake at? I thought this would be a better idea too but I think I overcooked them. Only thing I want to tweak next time I make.

You say 1 cup breadcrumbs in video but specify 1/2 cup in written instruction, which is correct?

When he said one cup of breadcrumbs, it seemed a bit much. I always do 1/2 cup pecorino, 1/2 cup breadcrumbs, one egg, half cup of water (he does cream) and one garlic clove per pound of meat. Too much garlic will overtake the meatballs. Also, when making the sauce, don't let the garlic brown before adding tomatoes. Edges should be just starting to turn color. Those are my secrets
