This is going to look exactly like vodka sauce to you. Same color, same cling, same rosy shine. But there’s no vodka in it, there’s no cream in it either.

This is Italy’s most legendary tomato sauce. Inspired by an Alfredo pasta in Disney World, Vittorio Cerea, owner Da Vittorio, when back home to Bergamo and set out to make the Italian chef’s answer to an Italian American icon. Swap the white of Alfredo with a the most refined velvety tomato sauce, and finish it table side.

Fast forward to today, and that restaurant has three Michelin stars, people flock from all over the world to try it, and they still finish it table side exactly like he did back then. This is Paccheri alla Vittorio.
