This week we are putting together a beautiful Italian fried eggplant sandwich but in order to make that, we need to learn how to make easy and delicious homemade roasted red peppers marinated Italian style in olive oil and garlic. The perfect condiment for our eggplant sandwich.


  • 3 Large Red Peppers

  • 2-3 cloves of Garlic, sliced as thin as possible

  • 1/3 Cup of Extra Virgin Olive Oil (or enough to cover the peppers)

  • Sea Salt to taste


  1. On a sheet tray, toss the peppers under the broiler, no oil, and char the skin of the peppers. Don’t be scared, you will not burn the peppers ever though it looks like that's what you are doing. This can be done on a grill, on the stovetop broiler, with a blowtorch, it doesn’t matter, either way, we are looking to achieve the same result.

  2. Once the peppers are nicely charred and soften, toss in a container or plastic bag and let the peppers steam for 15-20 minutes.

  3. In the meantime, slice garlic cloves thin and set aside.

  4. Once the peppers are softened, simply peel away the skin and remove the stem and seeds.

  5. Cut the peppers into whatever shape you want, I like small strips. Season the peppers with salt.

  6. Then in a mason jar or some container, add the sliced garlic and olive oil and then the peppers and a touch more salt if you need. Make sure the peppers are covered in olive oil. Close the lid and let them marinate for at least 4 hours. Will stay fresh in the fridge for about 2 weeks.
