The short rib grilled cheese...This may be the most important sandwich of my life. Created by my brother, Dave, the uniqueness of this sandwich stopped people in their tracks (along with generous samples of Brussels sprouts, also my brother's creation) and helped attract people to the cart…they talked about it, it pulled people in. Because of this sandwich, and the rest of that menu and the loyalty we formed because of it, it allowed me to have confidence that I could build something cool that people liked and inspired this journey in food I’ve been on for about 10 years now.
