Spaghetti alla Limone

The fastest, easiest, best summer pasta to eat in the summer heat is spaghetti limone. Years ago I made a video about it but I found a new method and it's not the only way I make it so today I’m sharing it all with you so let's jump into it.

Does lemon pasta need a lot of sourness? I can't eat too sour.

The acidity should be to your taste. Use the amount of lemon that suits you. An advantage of using creme fraiche is that the creme fraiche takes the rough edge of the lem,on.

This has to be the best most simple and delicious dish you can make. This method is so much easier than trying to get the cheese and water to emulsify perfectly and it allows for a great texture on the pasta with the dusted Parmesan. So simple so fast and easy it shouldnt taste this good but it does you can’t mess it up

My version of alla limone. Mix the juice and zest of one lemon (preferably Meyer) with 6 oz Kendall Farms Creme Fraiche, let sit until it is room temp. Cook angel hair pasta (reserve some pasta water). Have lemon creme fraiche ready in a deep serving bowl, add hot pasta water to thin sauce, add pasta. Serve with a furious amount of parm. I like to serve with some pomegranate seeds because it is so pretty. It also adds a certain something to the taste.
