Viral Turkish Kebabs Hack

I generally despise viral foods, but this one in particular unlocked a core memory in me that I’ve been trying to recreate for 20 years - the Turkish kebab shop called Yami Yami that I survived off of while living in Florence. Beef and lamb kebabs on a spit, wrapped in a flatbread almost like a burrito, filled with white sauce, hot sauce, french fries. Ordering there is how I learned to speak Italian. It is oddly enough, in my top 5 things to eat in Florence - and this new technique for making kebab that’s caught fire on the internet, is the secret to bringing it into my kitchen.
