The MOST Authentic Way to Make Indian Food at Home (No Tandoor)

My whole life, I’ve been told I need a tandoor oven to make Indian food. But after successfully making a skewered Gyro cone on the grill without a spit earlier this year, I think I can figure out a hack to make anything at home, especially recipes that require annoying specialty gear. Cue Akshay, owner of Junoon and Jazba, two of the best Indian Restaurants in NYC. Together, we’re going to develop a way to make two core Indian dishes, which are only made in a tandoor, at home without one. This is butter chicken and garlic naan.
